Breakfast, the most important meal of the day! While we believe all meals are important, there is something special about our first meal of the day. Physically speaking, breakfast literally breaks the overnight fasting period (as the name suggests). It replenishes your supply of glucose to boost your energy levels and alertness, gets your digestion in motion, and provides essential nutrients as we start our day.
Breakfast has an important role in our mental health as well. When we start our day with an adequate (and delicious) breakfast, it can set the tone for the rest of the day. We have found that getting breakfast in check almost always helps the rest of the day fall more easefully into place. Don’t believe us? Fruity Pancakes
Ingredients:
1 cup all-purpose flour
2 tbsp sugar
2 tbsp baking powder
1⁄2 tsp salt
1 cup milk
2 tbsp unsalted butter
1 large egg
Cinnamon
Assorted fruit (bananas, strawberries, blueberries)
Directions:
In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a medium bowl, whisk together milk, butter and egg.
Add dry ingredients to the milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
Heat about 1 tbsp butter on a large pan on medium heat.
For each pancake, spoon 1⁄4 cup of batter onto the pan (you should be able to fit 2 to 3 in a large skillet).
If adding fruit, place fruit into the wet batter on the pan.
Cook until browned, about 1 to 2 minutes, then flip carefully with a spatula and cook until the underside is browned, about 1 to 2 minutes more.
Transfer to a plate and cover loosely with aluminum foil to keep warm as you cook the remainder of the pancakes. Add more butter to the pan as needed (you'll end up with about 12-15 pancakes).
Serve warm with butter, syrup, and more cut up fruit on top!
